The energy-rich tuber contains not only carbohydrates and proteins but also Vitamin C. According to FAO, a medium sized potato contains about half the recommended daily dose of Vitamin C. Potatoes are grown over the whole world. In the Andes, potatoes have been eaten for about 8000 years. It was the Spanish who took potatoes to Europe in the 16th century, and Jonas Alströmer arranged for the import of potatoes to Sweden in the 18th century. Consumption rapidly increased, especially in the developing world. The official figure for potato harvests in the world in 2007 was 320 million tonnes.
Flavour research
When we buy potatoes, we choose a firm or floury kind. It is then a matter of making sure that they are not undercooked, so that they become hard and bitter. Nor must they be cooked so long that they become sweetish and mushy. When they have been cooked for the right time, the proper flavour comes forth.
How important flavour is can be seen from a new study at Örebro University/Garphyttan which was published at the beginning of 2008. A panel of six potato professionals was trained to taste and describe their flavour impressions during six tests. The taste of "Sparris" potatoes was described with the words "buttery chestnut, full bodied, dried lemon, oxidised oil and some bitterness", while "Terra Gold" received the verdict "sour tomato plant with bitterness and pea flavour. Some butteriness".
During the year of the potato, the first potato academy was set up. Where? in Alingsås, of course. It was here that Jonas Alströmer, the man who introduced the potato to Sweden, planted his first potatoes in 1723. The Academy wants to improve the reputation and quality of the potato with the motto "For the potato in our time".
