Organic products are characterised by low market shares, especially as regards pork. The question is therefore how the industrial structure in the Swedish food industry/retail trade and the degree of information affect the production and marketing of organic food.
Many consumers, but not all, are comparatively well informed about the properties of products. When the cost of producing a certain quality rises, price differences also increase. One way of reducing consumers' uncertainty is to introduce a certification programme. The willingness to introduce such a programme is however dependent not only on the consumers but also on the industrial structure.
